Since mangoes are in season, I made some mango salsa.This is refereshingly delicious! All the ingredients are fresh and healthy.
2 ripe mangoes, diced
1 red bell pepper, roasted, peeled and diced
1 red onion, diced
juice of 1 lime
1 jalapeno pepper, chopped ( I used the one in bottle coz I couldn't find a fresh one)
1 tbsp finely chopped cilantro
salt and pepper to taste
Combine all the ingredients. Mix well and chill for 20 minutes then serve. This does not hold up well and should be served right away. This goes well with grilled seafood or chicken.
